EVO Egg Masala

Ingredients
1 tbsp oil 
1 tsp cumin seeds 
3 medium onions, finely chopped 
1 tbsp ginger garlic paste 
1 cup tomato puree 
Salt to taste 
1½ tsp coriander powder 
1 tsp red chilli powder 
½ tsp turmeric powder 
1 tsp garam masala 
Handful of coriander leaves 
1 tbsp coriander leaves, chopped 
1 cup EVO Boiled Egg White, cubes 
Cook
Heat oil in a pan, add in cumin seeds and allow to splutter. 
Add in the finely chopped onions and sauté till translucent. 
Add in ginger garlic paste and roast till onions turn brown. 
Once the onions are roasted, add in the tomato puree and salt. Mix well and cook till tomatoes leave oil. 
Add in coriander powder, red chilli powder and turmeric powder, mix well & cook on medium high heat for 2-3 minutes. 
Chefs Tip: Keep sprinkling water after adding the dry spice powders to avoid them from sticking to the base of the pan or burning. You can add 1-2 tsp from time to time till the spices are completely cooked. 
Once everything is well cooked, turn off the flame and add in the garam masala. Mix well and allow to cook for 2-3 minutes in its own heat.
Sprinkle a handful of coriander leaves, mix well. Add in the EVO Boiled Egg White cubes and mix well until incorporated. 
Serve
Garnish with coriander leaves & serve with the choice of accompaniment. 
Recommendation: Enjoy this delicious recipe with soft naans or chapatis. If you wish to bring down the consistency of the dish and make it with gravy, then you can also pair it with jeera rice or regular boiled rice to get the best flavours.
