EVO in English Muffins

150 ml EVO Liquid  Egg
2 tbsp plant milk, optional
Salt to taste 
Pepper to taste 
2-3 tomato slices 
2 slices of plant based cheese 
Spring onion greens, chopped, for garnish 
Oil, for cooking 
2 English muffin buns 
In a bowl add EVO Liquid Egg along with salt, pepper & milk. Beat well using a fork. 
Slice the tomatoes.
Slice the English muffin buns and slightly toast them on a pan. 
Heat oil in a non-stick pan, pour the EVO liquid in it. Allow to cook for 30-40 seconds & scramble it. 
Once  scrambled, remove from the flame & mix in some chopped spring onion. 
Fill this scramble inside the English muffin buns & top with a slice of cheese & tomato.
Finish of with some more spring onion & cover with the other muffin bun. 
Serve hot.
