Evo Masala Bhurji

EVO Masala Bhurji

100 ml EVO Liquid Eggs
1 tbsp oil
1 tbsp garlic, finely chopped
1 green chilli, finely chopped
½ tbsp ginger, finely chopped
1 medium onion, finely chopped
1 medium tomato, finely chopped
Salt to taste
1½ tsp red chilli powder
¾ tsp garam masala
½ tsp coriander powder
¼ tsp turmeric powder
Coriander, chopped for garnish
Bread Slice/Pav – as required for serving.
Finely chop garlic, green chilli, ginger, onion & tomato.
Heat oil in a non-stick pan, add garlic and green chilli, sauté till fragrant. 
Add ginger, mix well and sauté till it begins to splutter. 
Add onions, mix well and sauté till they turn translucent. 
Add the tomatoes, mix them all in and cook for 2-3 minutes then add the salt and cook till tomatoes become mushy. 
Add red chilli powder, garam masala powder and turmeric powder, mix it all well. (At this stage you can add about 2 tbsp of water if needed)
Once the masala is well cooked, add the EVO liquid egg after lowering the flame.
Keep stirring continuously to form small coagulated particles, increase the flame back to medium after 2 minutes and continue stirring till the bhurji begins to dry. 
Add coriander and mix it in. 
Garnish with chopped coriander and serve hot along with a choice of accompaniment.
