1 tbsp oil
3-4 garlic cloves, minced
1 green onion, chopped
½ jalapeno pepper, diced
½ small red pepper, diced
½ cup refried beans
¼ cup black olives, pitted and sliced
½ cup plant based cheese, shredded
5-6 ready made taco shells
½ cup tomato salsa, to serve
Fresh chopped coriander, for garnish
1 tbsp oil
100ml EVO Egg
Salt to taste
Black pepper powder to taste
Mince the garlic cloves and set aside.
Finely chopped the onions, along with dicing jalapenos and red peppers.
Slice the pitted olives or use the pre-sliced ones.
Prepare tomato salsa or choice of accompaniment for serving.
Chop coriander for garnish and set aside.
Heat a non-stick pan on medium flame and grease well with oil, stir in garlic and onion along with a jalapeno and red pepper, add a pinch of salt and black pepper powder and saute for 1 minute.
Add in refried beans to the sauteed mixture and keep aside in a bowl.
In the same pan heat 1 tbsp oil and add EVO Egg along with salt and black pepper powder and cook for 2-3 minutes while stirring to scramble.
Once cooked, set aside in a separate bowl.
Grease the same pan with butter and heat tortillas one by one till it becomes slightly crispy, give tortillas a shape of taco shell, fill in the sauteed mixture and scrambled EVO Eggs.
Garnish with salsa, seasonings and chopped coriander.
