EVO Bagel Sandwich

Ingredients
200 ml EVO Egg
3 tbsp oil
½ cup baby spinach leaves
½ cup cherry tomatoes
Salt to taste
Black pepper powder to taste
2 tbsp vegan mayonnaise
½ tsp mixed herbs, dried
Prep
Wash spinach and cherry tomatoes thoroughly and cut the cherry tomatoes into half and keep aside in a clean bowl.
Take EVO Egg in a separate clean bowl, add salt and pepper and whisk until combined
Slice the bagel into two halves , spread vegan mayonnaise on the inside of each slice, sprinkle some mixed herbs and keep aside.
Cook
- Heat a non-stick pan on medium flame and grease it with oil, stir in spinach and cherry tomatoes along with a pinch of salt and pepper and saute for 1 minute. Keep aside in a bowl
- In the same pan, heat 2 tbsp oil on medium flame and pour the EVO egg mixture, cook it for 2 minutes with continuous stirring, till the curdles separate.
- Spread the Scramble in between the prepared bagel slices along with the sauteed spinach and cherry tomatoes.
Serve
Serve warm with a choice of seasonings and sauces.
