EVO Croissant Sandwich

Ingredients
100 ml EVO Eggs
1 croissant
2 tbsp oil
1 small tomato
2 lettuce leaves
¼ cup avocado
¼ cup red and green bell peppers
2 tbsp vegan mayonnaise
1 tbsp chives
Salt to taste
Black pepper powder to taste
Prep
Slice the croissant into two equal halves, spread mayonnaise inside of both halves and keep aside
Wash all the vegetables and keep aside, cut the tomato into 4-5 slices
Dice the avocado and keep aside
Julienne the bell peppers and keep aside
Take the EVO Egg in a clean bowl, add salt and pepper and whisk till combined, keep aside
Finely chop the chives
Cook
Heat a non-stick pan on medium flame and grease with oil
Pour in the EVO Egg mixture and cook for 2 minutes with continuous stirring until the curdles separates, sprinkle with chopped chives and keep aside
On the prepared croissant slice put lettuce leaves, tomato slices and spread EVO Scramble on top. Top with Avocado, julienne bell peppers and close the sandwich with the other slice of croissant.
Serve
Serve warm with a choice of accompaniments.
